Gas chromatography and mass spectrometry- welcome news for chocolate lovers

Apart from other research, gas chromatography and mass spectrometry, the heartbeat of analytical tools again proved to be bonus for the chocolate lovers.
Serotonin called as mood lifter found in chocolate, which is manufactured by cocoa beans. Chocolate change the mood and is loved by every category of population.
Jackfruit found in most of the tropical region which are very low cost and are now replacement for cocoa beans, which is the main constituent in chocolate.
The demand of chocolate in the world is elevating day by day and beating the production of cocoa beans. The sweet smelling jackfruit are boiled, roasted and steamed prior to eating, which is the cheap source of protein, fibre, and minerals, and these are mostly thrown as waste.
The analysis predicted that the demand for these beans will cross 4 million tonnes by 2020.Researchers were finding a better way to put the waste jackfruits seeds for better use and they discovered that the constituents of the jackfruit seeds produce same aromas as processed cocoa beans and therefore these cheap jackfruit seeds are capable to replace cocoa and can be used in the chocolate production.
Researchers made flour by acidifying or fermenting the seeds prior to drying and roasted these flours for repeated temperature and time by those mechanisms which are similar to those used for raising the chocolaty flavour of cocoa beans.
Using analytical techniques, chromatography and mass spectrometry it was discovered that many compounds from jackfruit flour that give chocolate its distinctive aromas- such as caramel, hazelnut or fruity.
Only with the use of mass spectrometry and chromatography it was discovered that the waste jackfruit seeds produce starch, after roasting the seeds of jackfruit they impart same aroma as that of chocolate.
The cheap and abundant jackfruit seeds can replace the cocoa beans for the manufacturing of the chocolates and beats the demand of the cocoa beans.
